Makes: 1 250g Fresh Ginger (preferably 4-6 months old) 100ml Rice Vinegar (I use Obento rice wine vinegar) 100ml White Sugar 1/2 tsp Salt Method Clean and wash ginger. Peel off ginger skin and thinly sliced. Salt the slices. Leave salted ginger slices in a bowl for 1 hour. Sterilized a heat-resistant jar or container. (I use a 300ml jam jar.)
